Voodoo Tuesday gourmet oils are carefully sourced from the highest quality ingredients and producers available. Every attempt is made to ensure that our products are as natural as possible. You’ll find that we put emphasis on cold-pressed oils from fruit, nuts or vegetables, and on the fact that additives are not used to preserve them. This is so that you benefit from the full flavour and nutritional benefits of the raw ingredient, without unnecessary chemicals or stabilisers.
Our Gourmet Olive Oils
Our olive oils are exclusively and deliciously extra virgin.
Technically speaking, this means that they are the result of cold-pressing olives, and contain less than 1% free acidity (expressed as oleic acid). The amount of acid is considered an expression of quality, and less is better. “Fine virgin,” “semi-fine virgin” and “virgin" oils have more acid, up to 4%. A good rule of thumb is that, as acid increases, so too does bitterness. Oils with greater than 4% free acidity are far too bitter for the enjoyment of most palates.
Where our oils are infused, the addition of the infused flavour component prevents us from declaring them as extra virgin on the ingredient label; however we guarantee that the underlying base which we use is of the highest quality.
Like fine wines, olive oil quality is influenced by many factors, and the simplest way to be sure that you have the best oil is by tasting it. If it is pleasant and enjoyable on its own, it is sure to complement or enhance whatever you are preparing it with.

How to use our Gourmet Olive Oils
Our olive oils will help you to get the very best out of your cooking at home, quickly and simply. Drizzled on, dipped into, or splashed over, the freshness of our oils will enhance many dishes.
Due to the volatility of the flavours of these cold-pressed olive oils, high-heat may affect the flavour. Therefore, for best results, we recommend that they are used on cold or gently warmed foods, or towards the end of cooking a dish.
We have provided recipes but please don’t limit yourself to these. We encourage you to experiment with different tastes, or try substituting some of the different infusions or flavours in place of the standard oil used in some of your favourite recipes.
